Uh, This is a toughie! There literally thousands out there! I think the one enemy that I have always adored in the FF series would be the Adamantoise. I love its design and ferociousness. It's essentially a moving fortress! Good stuff! Even better would be a MECH ADAMANTOISE! Perhaps an Adamechtoise? or Datamantoise!

There a lot of monsters out there in the FF series But I would like be a tonberry so i could be sneaky person and get the bad guys in the game and have a one hit K-O against the evils in the main game! being an Sneaky tonberry can beat cactars anytime but if they unleash the needles there is no escape!

Lots of choices. FF VI Mog was way awesome, but I'm going to stretch a bit and say... the Slime Tank from Rocket Slime. It's huge, holds lots of slimes, and can unload massive payloads of carnage.
If you have not seen that game, it's worth checking out. Starts slow, but gets good. Tank battles rock.

DOOMTRAIN. I could catch it to work, and even if I was late it wouldn't matter because nobody's going to give guff to somebody who's just stepped off a locomotive right outta THE INFERNO. Also as a child I was a big fan of Thomas the Tank Engine, so having access to a train with a face would be both convenient and nostalgic. Similarly I would make an effort to put a smile on Doomtrain's troubled face by stoking its coals. It'd be a steamy relationship but I'd make sure Doomtrain didn't go off the rails. He's a runaway train but I'd not run away from him.

Diablos, of course. My favourite GF from my favourite FF-

I remember my 11 year old self playing FF VIII (the first FF I played back then) and getting my mind blown when I discovered and started fighting Diablos.

When I managed to defeat it and started using it, it quickly became my favourite GF, it's just too stylish :p That no-encounters skill also had something to do with it though.

I think I'll go with Ragtime Mouse from Final Fantasy IX: just imagine Ragtime Mouse's summon ability...It could be called "Question Time!" and based on enemy's Luck it would either get good or bad answer, and if it answered correctly Ragtime Mouse would boost that enemy's stats or do something nasty for the party, or if enemy would be wrong, the party would get some boost or the enemy would be in a pretty bad situtation.
