Here are just a few that've stuck with me:
"On the Verge of the Assault" - Crisis Core
"Fulfilled Desire (Ending Credits)" - Crisis Core
"Defiers of Fate (OST Plus)" - XIII
"Terra's Theme (Piano Collections)" - VI
"Nail of the Heavens" - XIV 1.0
Honorable mention goes to "Somnus."

I really can't choose! I mean VI, VII, IX, XIII, XIII-2 and some LR so far have great OSTs!

Why are you skipping FF X? It has some of the greatest FF music in the history of the franchise and easily the most beautiful and emotional ones. Nothing matches To Zanarkand (orchestral version), The Dance, Suteki da ne or Ending Theme from FF X when it comes to emotions. It drives me to tears and chills until this day
X's "To Zanarkand" orchestral is indeed one of the best and I should have put that into my top list... But I am not that fan of the rest. They are indeed beautiful but not just in my favorites. I love the game so much, for me X's story was one of the greatest in the franchize and I can't wait for the HD version, but the music never drove me that crazy compared to other titles.
I wanna share something a bit different. I love trance/techno music so when I stumbled upon this guy on YouTube who makes his own remixes of FF music when he gets the chance, I was pumped. I can't get enough of it, and if you're into this kinda stuff like I am, do check his stuff out:

He's such a legend that he even provides downloads for his music, all for free. And yes, you will need headphones to feel that bass (unless you have a wicked sound system already!).
